MINI PROTEIN PUMPKIN PIE

Ingredients
  

Crust

  • 1 1/2 cups almond flour
  • 1/2 c. swerve powdered sugar can add more if you want it sweeter
  • 1/4 tsp salt
  • 5 tbsp butter melted

Filling

  • 1 can pumpkin puree NOT pie filling
  • 1 vanilla premier protein
  • 1 tbsp pumpkin spice seasoning
  • 1 tbsp swerve brown sugar
  • 2 eggs

Instructions
 

  • Mix dry ingredients for crust in a box and mix well, melt butter and combine to make crust. Let the crust sit for about 10-15 minutes to let the almond flower hydrate. Place into paper lined muffins tins. Place in the oven for about 10-15 minutes at 350 to pre-bake then let cool. In a separate bowl mix all filling ingredients and top on to cooled crusts. Put it back into the oven for about 35 minutes. Let cool and top with whip cream and enjoy!
